Paleo Banana Pancakes

Ingredients

  • 1/2 banana
  • 1/2 cup unsweetened almond milk
  • 1 pasture-raised egg
  • 1/2 tsp vanilla
  • 3 tbsp unflavored collagen peptides or vanilla protein powder
  • 1/2 tsp cinnamon
  • 1/3 cup cassava flour or sub coconut flour
  • 2 tbsp ground flaxseed
  • 1/4 tsp baking powder
  • Optional: if batter is too liquidy, add 1 tbsp coconut flour

Instructions

  • Combine all ingredients in a blender to blend for 1 minute.
  • Heat pan on medium-low then spray with coconut oil.
  • Drop batter (about 1/3 cup) in pan and turn the heat on low to let cook 3-4 minutes each side.
