Dairy-Free Cream Cheese Frosting

The *best* dairy-free cream cheese frosting!! Trust me, I was hooked on it growing up.

Ingredients

Vanilla Cake

  • 1 box Simple Mills vanilla cake mix
  • 3 eggs
  • 1/3 cup coconut oil
  • 1/3 cup water
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 2 scoops unflavored collagen peptides
  • 1-2 tbsp ground flaxseed

DF Cream Cheese Frosting

  • 1/3 cup Miyokos Creamery┬ádairy-free cream cheese
  • 1/4 cup Miyokos dairy-free butter
  • 3/4 cup Lakanto┬ámonk-fruit powdered sugar (or sub 1 cup regular powdered sugar)
  • 1 tbsp vanilla extract

Instructions

Gluten-Free Vanilla Cake

  1. Mix wet ingredients together then fold in dry ingredients. Bake per instructions on Simple Mills box.

DF Cream Cheese Frosting

  1. Use electric beaters to mix all ingredients together in a large bowl until smooth, about 2-3 minutes.

  2. Let cake cool, then place in the fridge to chill for 30 minutes. Remove, option to use a cookie cutter into your desired shape, then frost!

*keep frosting in an airtight container in the fridge for up to a week.
