Dairy-Free Cream Cheese Frosting

The *best* dairy-free cream cheese frosting!! Trust me, I was hooked on it growing up.

Ingredients 

Vanilla Cake

  • 1 box Simple Mills vanilla cake mix
  • 3 eggs
  • 1/3 cup coconut oil
  • 1/3 cup water
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 2 scoops unflavored collagen peptides
  • 1-2 tbsp ground flaxseed

DF Cream Cheese Frosting

  • 1/3 cup Miyokos Creamery dairy-free cream cheese
  • 1/4 cup Miyokos dairy-free butter
  • 3/4 cup Lakanto monk-fruit powdered sugar , (or sub 1 cup regular powdered sugar)
  • 1 tbsp vanilla extract

Instructions 

Gluten-Free Vanilla Cake

  • Mix wet ingredients together then fold in dry ingredients. Bake per instructions on Simple Mills box.

DF Cream Cheese Frosting

  • Use electric beaters to mix all ingredients together in a large bowl until smooth, about 2-3 minutes.
  • Let cake cool, then place in the fridge to chill for 30 minutes. Remove, option to use a cookie cutter into your desired shape, then frost!

Notes

*keep frosting in an airtight container in the fridge for up to a week.

    Can I sub liquid coconut oil as to not impart any ‘coconut’ flavor, no matter how subtle it most likely is…?
