Pumpkin Pie Bliss Balls

The perfect fall treat! Get creative with ingredients if you're missing one or two things - they're so easy to throw together and customize however you like. Each little ball contains vitamins a, b, c and e, not to mention healthy fats and fiber!

Ingredients

  • 1/3 cup pumpkin purée
  • 1/2 cup almond butter
  • 1/2 cup pecans
  • 3 tbsp maple syrup
  • 2 tbsp ground flax
  • 1/2 cup coconut flour
  • 1/4 tsp ground ginger
  • 1/4 tsp nutmeg
  • 1 tsp cinnamon
  • 2 tbsp shredded coconut

Topping

  • 2 tbsp shredded coconut

Instructions

  1. Add all ingredients minus topping into a food processor and pulse until well-combined.

  2. Roll into bite-sized balls, place on a parchment paper covered plate, then refrigerate for 15 minutes.

  3. Add shredded coconut topping to a deep dish and roll each ball until fully coated. Store in the refrigerator and enjoy! :)
