Honey Balsamic Chicken, Creamy Mashed Potatoes and Crispy Broccolini

Ingredients

Honey Balsamic Chicken

  • 2-3 thin-cut organic chicken breast
  • 3 tbsp extra virgin olive oil
  • 2 tbsp coconut aminos
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1 tbsp minced garlic
  • sea salt
  • pepper
  • red chili flakes

Mashed Potatoes

  • 5-7 medium yellow potatoes, peeled and cubed
  • 1/4 cup milk of choice (I used unsweetened almond milk)
  • 1/4 cup ghee
  • 3-4 tbsp extra virgin olive oil
  • 1 tbsp garlic, minced
  • sea salt
  • ground pepper

Broccolini

  • 1 bunch broccolini
  • 1-2 tbsp ghee
  • 1-2 tbsp avocado oil
  • sea salt, to taste

Instructions

Honey Balsamic Chicken

  • Preheat oven to 400 degrees F.
  • Whisk the marinade until well combined.
  • Add olive oil to a 9x13 baking dish, then add chicken and pour the marinade in, using a spoon to distribute evenly if needed.
  • Bake for 20 minutes, or until the chicken is cooked through.
  • While the chicken cooks, prepare the mashed potatoes.

Mashed Potatoes

  • Bring a large pot of water to a rolling boil.
  • (While the water boils, you can prepare the broccolini.)
  • Add the potatoes and cook until fork tender.
  • Once cooked, strain and add back to pot. Then use a potato masher (or fork/spoon) to mash well.
  • Add remaining ingredients and mix until combined and creamy.

Broccolini

  • Heat a medium pan over medium heat.
  • Add ghee and olive oil and once hot, add broccolini. Cover for ~5 minutes or until the broccolini is steamed and slightly charred, making sure to stir every few minutes. Remove from burner once tender.
