Heat the grill to about 500 degrees F.
Prep the chicken by trimming and butterflying, then marinate in the honey dijon dressing and salt & pepper.
In a large mixing bowl, toss veggies in extra virgin olive oil or avocado oil and pink salt.
Prep and cook rice.
Once the grill is hot, add the chicken and veggies (I like to use a grill tray for the veggies). Close and cook for 5-7 minutes.
Flip, then close the grill and cook for ~2 additional minutes (depending on the thickness of your chicken).
Assemble your bowls with rice, veggies and chicken. Use the honey dijon dressing to drizzle over the top and enjoy!
