These air fryer nachos are everything I want in an easy, shareable meal: crispy tortilla chips layered with taco-seasoned ground beef, black beans, melty cheese, and colorful veggies, then finished with creamy toppings and a drizzle of high-protein cottage cheese queso.
Instead of making a separate appetizer and dinner, these loaded beef nachos are hearty enough to serve as a meal and come together in about 30 minutes. They’re especially good for game day, casual dinners with friends, or any night when you want something fun without a lot of work.

The Secret to Perfect Air Fryer Nachos
The key to really good air fryer nachos is layering. I like to build 2–3 layers so every chip gets a little bit of the taco-seasoned beef, black beans, cheese, and veggies instead of ending up with a pile of toppings on top.
The black beans add fiber and plant-based protein, while the ground beef and cheese help make these nachos more satisfying. Then everything gets air fried until the cheese is melted and the edges of the chips are golden.
As a registered dietitian, I especially love that this recipe uses ground beef, an unexpected superfood. You can of course make them with ground turkey, or even ground chicken, too, but I’m telling you the flavor of the ground beef is perfection. They’ve become a staple in our house and I know you’ll love them too!

High-Protein Cottage Cheese Queso
I also have to admit the cottage cheese queso is what really sets these beef nachos apart. Blended with taco seasoning and Rotel, then warmed with shredded cheese, it turns into a creamy, high-protein queso that’s perfect for drizzling or dipping. Cottage cheese adds a boost of protein and calcium without making the queso feel heavy, and you can easily adjust the consistency with a splash of water or milk.
Finish the nachos with avocado, pico de gallo, Greek yogurt lime crema, cilantro, and green onions for fresh flavor and healthy fats. These are best eaten right away while the chips are still crisp, so serve them up with lime wedges and extra queso for dipping. Hope you love ‘em!

These air fryer beef nachos come together in about 30 minutes with layers of seasoned beef, black beans, melty cheese, veggies, and creamy cottage cheese queso.

- Cook the beef. Brown the ground beef in avocado oil, then stir in the taco seasoning and water. Simmer until thickened and saucy, reserving ½ teaspoon of seasoning for the queso.
- Make the crema. Whisk together the Greek yogurt, lime juice, and salt until smooth and drizzle-able. Refrigerate until ready to serve.
- Blend the queso. Blend the cottage cheese, reserved taco seasoning, and ½ cup drained Rotel until smooth and creamy, adding a splash of water if needed.
- Warm the queso. Transfer to a saucepan, stir in the shredded cheese, and warm over low heat until smooth and melted. Thin with water or milk as needed, then stir in the remaining Rotel.
- Layer the nachos. Line the air fryer basket with parchment, then layer the tortilla chips, beef, black beans, cheese, and veggies 2–3 times, keeping the pile below ¾ of the basket.
- Air fry. Cook at 360°F for 4–7 minutes, checking around 4 minutes, until the cheese is melted and the chips are golden around the edges.
- Top and serve. Transfer to a serving platter and immediately top with avocado, pico de gallo, lime crema, cottage cheese queso, cilantro, and green onions. Serve with lime wedges and extra queso for dipping.

Recipe Substitutions & Questions
These simple substitutions and swaps make it easy to customize these air fryer nachos based on what you have on hand or your dietary needs.
Tips, Tricks & Substitutions
- Ground beef: You can swap the ground beef for ground turkey or ground chicken. Lean ground beef also works if you prefer a lower-fat option.
- Air fryer fill level: Keep the nachos at or below ¾ of the way up the basket so the middle layers heat through and the cheese melts before the top gets too browned.
- Chip choice: Use thicker, sturdy tortilla chips so they hold up to layering and air frying without burning or shattering.
- Beans: Swap the black beans for refried black beans for a creamier texture. Spread small dollops throughout the layers to help prevent soggy chips.
- Cheese: Goat cheddar can be swapped for another goat’s milk cheese, a well-melting cheddar or Mexican blend, or a dairy-free shredded cheese. Keep in mind that dairy-free cheeses may not melt quite as well, especially in the queso.
- Dairy-free: Use coconut yogurt in the lime crema and dairy-free shredded cheese in the nachos. For a dairy-free queso option, check out the dairy-free queso in Rachael’s latest cookbook.
- Make it spicier: Add extra pickled jalapeños, a pinch of cayenne to the taco beef, or more taco seasoning to the queso.
- Make ahead: The beef, crema, and chopped veggies can all be prepped ahead and refrigerated. Assemble and air fry just before serving, and gently reheat the queso with a splash of water if needed.

FAQs
How do you keep air fryer nachos from getting soggy?
The key is to keep moisture under control and serve them right away. Use sturdy tortilla chips, don’t overdo wet toppings during the air-frying process, and layer the beef, beans, cheese, and veggies so everything is distributed throughout the nachos. I also recommend adding the avocado, pico de gallo, crema, and cottage cheese queso after air frying rather than before. These are definitely best served hot and immediately while the chips are still crisp.
Can you use parchment paper when making nachos in an air fryer?
Yes, parchment paper can make it much easier to lift a full basket of nachos out of the air fryer and transfer them to a serving platter. For this recipe, use two pieces of parchment overlapping in an X so the basket is covered, and trim any excess so the paper stays away from the heating element. The parchment should be weighed down by the food and should never be used loose in the basket.
How do you reheat cottage cheese queso?
Reheat cottage cheese queso gently over low heat, stirring frequently. If it has thickened in the refrigerator, whisk in a small splash of water or milk until it reaches a smooth, drizzle-able consistency again. I prefer making the queso ahead and reheating it just before serving rather than reheating the assembled nachos, since the chips are best when they’re freshly air fried.

Air Fryer Beef Nachos with High-Protein Cottage Cheese Queso

Equipment
- Air Fryer
- Blender
Ingredients
Nachos:
- 1 tablespoon avocado oil
- 1 pound 90–93% lean ground beef
- 1 package of clean taco seasoning (reserve ½ tsp of seasoning for queso), plus water per package directions (I like Siete Taco Seasoning)
- 5-6 ounces sturdy tortilla chips
- 1 15 oz. can black beans, drained and rinsed
- 2 cups shredded colby jack, (or goat cheddar or dairy-free alternative)
- 1 cup diced red onion, (½ large onion)
- 1 cup diced red bell pepper, (1 large pepper)
- 1 cup fresh corn kernels, (from 1-2 medium cobs, cut off the cob)
- 1 – 7 oz can sliced pickled jalapeño, (or fresh if preferred)
Suggested fresh toppings (your choice):
- 1 large avocado, diced
- ½ cup pico de gallo
- ¼ cup chopped cilantro
- 2 green onions, thinly sliced
- Lime wedges, for serving
Greek yogurt lime crema:
- ½ cup plain Greek yogurt, (I like Nancy’s Probiotic Foods; or coconut yogurt for dairy-free – I like Cocojune)
- 2 tablespoons lime juice
- Pinch of salt
High-protein cottage cheese queso (for drizzling):
- 1 cup full-fat cottage cheese, (I like Nancy’s Probiotic Foods)
- ½ teaspoon reserved taco seasoning, (or more to taste)
- 1 – 10 oz can rotel-style tomatoes with green chiles, well drained and divided
- ½ cup shredded colby jack cheese, (or goat cheddar)
- 2 –4 tablespoons water or milk of choice, (as needed to thin)
Instructions
- Heat a large skillet over medium heat.
- Add the avocado oil and ground beef. Cook, breaking up with a spoon, until browned and cooked through, 6–8 minutes.
- Stir in the taco seasoning (removing ½ tsp for queso) and water per package directions, simmer 1–2 minutes until thickened and saucy, then remove from the heat and set aside.
Greek Yogurt Lime Crema:
- In a small bowl, whisk together the Greek yogurt, lime juice, and a pinch of salt until smooth and drizzle-able. Adjust lime and salt to taste, then refrigerate until ready to serve.
High-Protein Cottage Cheese Queso:
- Make the queso. Add the cottage cheese, taco seasoning, and ½ cup drained Rotel to a blender. Blend until completely smooth and creamy, adding 1–2 tablespoons of water if needed to help it blend.
- Transfer the blended cottage cheese mixture to a small saucepan. Stir in the shredded goat cheddar. Warm over low heat, stirring constantly, just until the cheese melts and the queso is smooth and steamy but not boiling. If it’s too thick to drizzle, whisk in additional warm water or milk 1 tablespoon at a time until it flows easily from a spoon while still coating it.
- Remove from heat. If for some reason your queso seizes, you can pop it back into the blender and just blend for 5 seconds to reconstitute.
- Taste the queso and adjust taco seasoning or salt as needed. Then add the remaining drained rotel to the cheese sauce to make it chunky.
- Drizzle over the hot nachos right before serving, or serve on the side in a small bowl for dipping.
Assemble and Make the Nachos:
- Now make the nachos. Line the basket with two pieces of parchment paper overlapping in an X so that all sides of the air fryer are covered, trimming if needed so it doesn’t touch the heating element.
- Build the first layer of nachos: add a generous layer of tortilla chips to mostly cover the bottom of the basket. Scatter on about one-third of the taco-seasoned beef, one-third of the black beans, a handful of goat cheddar, and some of the red onion, bell pepper, corn, and pickled jalapeños.Repeat 1–2 more times to create 2–3 total layers with the remaining chips, beef, beans, goat cheddar, and veggies, stopping when the nachos reach about ¾ of rhe way up the air fryer basket. If the pile goes higher than this, the top will brown before the middle has time to heat through and get melty.
- Air fry the nachos at 360°F for 4–7 minutes, checking after about 4 minutes, until the cheese is melted and the top chips are golden at the edges. Avoid overcooking so the chips don’t burn.
To Serve:
- Carefully lift the parchment liner to transfer the nachos to a serving platter. Top immediately with the diced avocado, spoonfuls of pico de gallo, a drizzle of the Greek yogurt lime crema, queso, cilantro, and green onions. Serve right away with lime wedges on the side. Enjoy!
Notes
- Ground beef: Substitute ground turkey or ground chicken, or use lean ground beef.
- Beans: Swap black beans for refried beans; use small dollops to prevent soggy chips.
- Cheese: Substitute goat cheddar with another goat’s milk cheese, cheddar, Mexican blend, or dairy-free shredded cheese. Dairy-free cheese may not melt as well, especially in the queso.
- Dairy-free: Use coconut yogurt for the crema and dairy-free shredded cheese for the nachos. See Rachael’s latest cookbook for a dairy-free queso option.
- Spicier: Add extra jalapeños, cayenne to the beef, or more taco seasoning to the queso.
