Gluten Free White Chocolate Macadamia Nut Cookies

Ingredients 

  • 2 eggs
  • 1/4 cup melted coconut oil
  • 1/4 cup maple syrup
  • 1/4 cup cashew butter
  • 1 1/2 tsp vanilla extract
  • 3 tbsp melted ghee, (or grass-fed butter)
  • 1 cup GF flour, (I used Bob’s Red Mill 1:1 Baking Flour)
  • 1 cup almond flour
  • 1/4 tsp sea salt
  • 1/2 tsp baking powder
  • 1/2 cup chopped macadamia nuts
  • 1/2 cup white chocolate chips, **optional (I used Whole Foods 365 brand)

Instructions 

  • Preheat oven to 350 degrees F.
  • In a large mixing bowl, whisk together wet ingredients. Add dry ingredients and stir until thoroughly combined.
  • Fold in chopped macadamia nuts and white chocolate, if using. *Option to leave out white chocolate and instead, melt and drizzle over the top of the macadamia nut cookie once they’re done baking.
  • Use a cookie scoop or spoon to place batter on parchment paper covered cookie sheet. Dough will not expand in diameter, so be sure to press down a bit!!
  • Bake for 11 minutes. Enjoy!

    Could I use this as a base cookie recipe and switch it up to add dark chocolate & macadamia nuts or walnuts? I’ve landed upon some awesome chocolate bars lately and have been wanting to chop them up and BAKE!

    I was craving a healthier version of a white chocolate macadamia nut cookie and am SO happy I found this recipe. I followed Rachael’s recipe exactly as listed (used Bob’s 1:1 baking flour) and they are insanely good! Perfect amount of sweetness and I love that the recipe uses healthy ingredients. The cookies are a little crispy on the outside and so fudgy and soft when you take a bite in the middle. This will definitely be my go-to recipe when I have macadamia nuts on hand. Thank you for such a great recipe! <3

    Delicious! I love that these are not overly sweet. Substituted almond/cashew butter and they were great!

    1. I tried a few different ones– Trader Joe’s didn’t work as well as I had hoped, Cup 4 Cup also worked great! But Bob’s came out the best 🙂

    The cookies are really good! I am trying to find a healthier option but still sweet treats and these ones really hit all aspects of that! I am super impressed with the way they turned out! The only thing I couldn’t figure out is how to get the white chocolate to only melt enough to drizzle on the cookies so instead I rubbed it on the cookies. Thank you for the recipe!
