Pumpkin Chocolate Chip Muffins

Ingredients 

  • 1 pasture-raised egg
  • 1/2 cup unsweetened almond milk
  • 1/2 cup pumpkin
  • 1/3 cup unsweetened Apple sauce
  • 1 mashed banana
  • 1/4 cup cashew butter
  • 1/4 cup maple syrup
  • 1 tsp vanilla
  • 1 cup spelt flour
  • 1 1/2 tsp baking powder
  • 1/3 cup coconut flour
  • 1/2 tbsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp pumpkin pie spice
  • 1/8 tsp sea salt
  • 1/4 dark chocolate bar

Instructions 

  • Whisk egg in large bowl then add almond milk, pumpkin, apple sauce, banana, cashew butter, maple syrup and vanilla to whisk again
  • Mix dry ingredients in separate bowl and slowly pour into wet ingredients, stirring until thoroughly combined
  • Pour batter into coconut oil sprayed muffin tin (fill cups 3/4 full), then drop several chocolate chunks on top (walnuts are a good addition as well)
  • Bake for 23-26 min at 350 degrees F
  • Remove from oven and let cool for 20 minutes
