
This high-protein street corn taco skillet is exactly the kind of dinner I want during a busy week—one pan, 30 minutes, tons of flavor, and over 30 grams of protein per serving. And if you feel like that’s too good to be true – it’s not! Somehow that is all possible in one meal, and as a registered dietitian, that makes me so happy.
It’s made with seasoned ground beef, black beans, fire-roasted corn, bell pepper, and zucchini, then finished with a creamy lime-cotija sauce that gives it that insane street corn flavor. Serve it over rice, scoop it up with tortilla chips, or double the taco skillet portion and save the leftovers for quesadillas the next day.

For the Taco Skillet:
- Avocado oil
- Small yellow onion
- Red bell pepper
- Lean ground beef (90–93%)
- Packet of taco seasoning (I like Siete)
- Water
- Zucchini
- Canned black beans
- Bag of frozen fire-roasted corn
- Sea salt
Street Corn Sauce:
- Plain Greek yogurt (I like Maple Hill Creamery)
- Cotija cheese
- Fresh lime juice
- Chili powder
- Garlic powder
- Ground cumin
- Pinch of kosher salt
- Water
To Serve (optional):
- Cooked white or brown rice
- Tortilla chips (gluten-free if needed/preferred; I like the brand Masa for GF)
- Fresh cilantro
- Lime wedges
- Diced avocado
- Quick pickled red onions (see below), or store-bought

- Red onion
- Rice vinegar or apple cider vinegar
- Honey
- Salt

This street corn taco skillet is the easiest one-pan dinner to make when you’re short on time but want a high-protein, flavorful meal. Not to mention it makes the best leftovers – I love to double batch the taco skillet portion and use what’s left to make quesadillas the next day. So delish!
Also – if you’re making the quick pickled red onions from scratch, start those first since they need at least 15 minutes to pickle. You can absolutely use store-bought to keep things even easier.






- Sauté the veggies. Heat avocado oil in a large skillet, then cook the onion, bell pepper, and finely diced zucchini until softened and starting to brown. Giving the veggies a little color here builds a ton of flavor before the beef goes in.
- Brown the beef. Add the ground beef and break it up as it cooks until browned and cooked through. Don’t forget to drain off any excess grease if needed!
- Season it up. Stir in the taco seasoning and a splash of water, then let everything simmer for a couple minutes so the seasoning coats the beef and veggies and the extra liquid cooks off.
- Add the beans and corn. Stir in the black beans and fire-roasted corn and let everything cook together until hot and the corn starts to lightly brown. This is where the skillet really starts to get that street corn-inspired flavor and texture
- Make the lime-cotija sauce. While the skillet finishes, whisk together Greek yogurt, cotija, lime juice, and spices. Add a little water until it’s thin enough to drizzle. The Greek yogurt keeps the sauce creamy while adding a little extra protein, and the lime keeps all those taco flavors fresh.
- Finish and serve. Take the skillet off the heat and drizzle with the street corn sauce, then add extra cotija, fresh cilantro, lime, and quick pickled red onions if using. Serve as-is, over rice, or with tortilla chips for scooping.







Tips, Tricks & Substitutions
Here are a few easy ways to switch it up, depending on what you have on hand or how you prefer to serve it. Let me know below in the comment section if you come up with any others too!
- Fire-roasted corn: Fire-roasted corn adds extra smoky flavor and is worth using if you can find it. If you can’t find fire roasted frozen corn, regular corn is fine!
- Make it spicy: Add a diced jalapeño along with the onion, bell pepper, and zucchini, or add a pinch of cayenne to the street corn sauce. I’d start small and add more from there.
- Dairy-free: Swap the Greek yogurt for a plain, unsweetened dairy-free yogurt (I like Cocojune) and use a dairy-free cotija or feta-style crumble. You can also leave out the cheese and season the sauce with a little extra salt to taste.
- Rice options: Serve the skillet over white or brown rice for a heartier meal, or stir 1 to 2 cups of cooked rice directly into the skillet at the end. You could try riced cauliflower too as an option!
- Leftover quesadillas: Turn leftovers into an easy second meal by spreading the taco filling over cassava or tortillas (gluten-free or organic flour, depending on dietary preference) and adding shredded cheddar. Top with another tortilla, lightly brush with avocado oil, and bake until hot and crispy. Cut into wedges and serve with salsa, guacamole, or Greek yogurt.

Can I Make This Street Corn Taco Skillet With Chicken?
Yes! You can swap the ground beef for ground chicken or ground turkey and follow the recipe the same way. Since both are leaner than ground beef, you may want to add a little extra avocado oil if the skillet looks dry while cooking. The taco seasoning, fire-roasted corn, black beans, and creamy lime-cotija sauce still work really well with chicken. I’d love to hear what you think if you make it with either of these options.

Ingredients
For the Taco Skillet:
- 1 tablespoon avocado oil
- 1 small yellow onion, diced (about 1 cup)
- 1 red bell pepper, diced (about 1 cup)
- 1 lb. lean ground beef (90–93%)
- 1 packet of taco seasoning, (I like Siete)
- ¼ cup water
- 1 medium zucchini, finely diced
- 1 (15 oz.) can black beans, drained and rinsed
- 1 (12 oz.) bag frozen fire-roasted corn (about 2 cups), thawed
- Sea salt, to taste
Street Corn Sauce:
- ⅓ cup plain Greek yogurt, (I like Maple Hill Creamery)
- ¼ cup cotija cheese, crumbled (about 1 oz.), plus more for topping
- Juice of ½ lime (about 1 tablespoon)
- ½ teaspoon chili powder
- ½ teaspoon garlic powder
- ¼ teaspoon ground cumin
- Pinch of kosher salt
- 2-4 teaspoons water, to thin
To Serve (optional):
- Cooked white or brown rice
- Tortilla chips, (gluten-free if needed/preferred; I like the brand Masa for GF)
- Fresh cilantro, chopped
- Lime wedges
- Diced avocado

Quick Pickled Red Onions (if not using store-bought):
- ½ red onion, thinly sliced (about ¾ cup)
- ½ cup rice vinegar or apple cider vinegar
- 1 teaspoon honey
- ½ teaspoon salt
- ½ cup water
Instructions
For the Taco Skillet:
- Heat the avocado oil in a large skillet over medium-high heat.
- Add the onion, bell pepper, and finely diced zucchini and cook, stirring occasionally, until softened and beginning to brown, about 5 to 6 minutes.
- Add the ground beef and break it up with a spatula. Cook until browned and cooked through, about 5 minutes. Drain any excess grease if needed.
- Add the taco seasoning and ¼ cup water. Stir well and let simmer for about 2 minutes, until the beef and vegetables are evenly coated and most of the liquid has cooked off.
- Stir in the black beans and fire-roasted corn. Cook for another 3 to 4 minutes, stirring occasionally, until everything is heated through and the corn begins to lightly brown. Taste and season with salt as needed.
- While the skillet finishes, make the street corn sauce: in a small bowl, whisk together the Greek yogurt, cotija, lime juice, chili powder, garlic powder, cumin, and a pinch of salt until combined. Add 1 to 2 teaspoons of water as needed to thin the sauce to a drizzle-able consistency.
- Remove the skillet from the heat. Drizzle the street corn sauce over the top, then finish with extra cotija, fresh cilantro, and a squeeze of lime.
To Serve & To Store:
- Serve as-is, over rice, or with tortilla chips for scooping. Enjoy!
- Store the skillet and street corn sauce separately in airtight containers in the refrigerator for up to 4 days. Reheat the skillet, then add the sauce and toppings just before serving.
Quick Pickled Red Onions (if not using store-bought):
- Add thinly sliced red onion to a small jar.
- Warm the rice vinegar or apple cider vinegar with ½ cup water, honey, and salt until dissolved, then pour over the onions.
- Let sit for at least 15 minutes before serving. Store leftovers in the fridge for up to 2 weeks.
