Blackberry Cashew Baked Oats
Ingredients
- 1/2 cup rolled oats
- 1 scoop vanilla vegan protein
- 2 tbsp chia seeds
- 2 tsp cinnamon
- 1 tbsp Nikkis Coconut Butter cashew cookie coconut butter
- 1 tsp baking powder
- 2 tbsp chopped cashews
- 1/4 cup frozen blackberries
- 1/2-3/4 cup unsweetened almond milk
Instructions
- Mix all ingredients together and pour into small baking dish (The less liquid–> more of a dry, cake-like texture)
- Bake at 350 for 35 minutes
- Remove from oven and drizzle with coconut butter & cinnamon

Amazing breakfast for when I have some extra time in the mornings! I subbed in pecans for cashews and used mixed berries. Great way to switch up my usual oats!
