Blackberry Cashew Baked Oats

  • 1/2 cup rolled oats
  • 1 scoop vanilla vegan protein
  • 2 tbsp chia seeds
  • 2 tsp cinnamon
  • 1 tbsp Nikkis Coconut Butter cashew cookie coconut butter
  • 1 tsp baking powder
  • 2 tbsp chopped cashews
  • 1/4 cup frozen blackberries
  • 1/2-3/4 cup unsweetened almond milk


  • Mix all ingredients together and pour into small baking dish (The less liquid–> more of a dry, cake-like texture)
  • Bake at 350 for 35 minutes
  • Remove from oven and drizzle with coconut butter & cinnamon

    Amazing breakfast for when I have some extra time in the mornings! I subbed in pecans for cashews and used mixed berries. Great way to switch up my usual oats!
