Iโ€™m always a little sad when summer starts winding down, but I do love getting back into my healthy slowcooker recipes in fall. This is the time of year when my slow cooker and Instant Pot start earning their spot on the counter again. I love being able to throw dinner together earlier in the day, get everything going, and not have to worry about it again until dinner time.

These are some of my favorite healthy slow cooker (and Instant Pot) recipes that are minimal hands-on cooking, lots of flavor, and a dinner everyone can sit down and enjoy.

My Favorite Slow Cooker and Instant Pot Recipes for Fall

If you’re looking for dinner ideas for the -ber months, start here. I’ve rounded up the soups, chilis, and hearty dinners I make when I’m craving something warm and comforting but still want a good amount of protein in the meal.

CrockPot Slow Cooker Pot Roast Recipe

Crockpot Pot Roast

This will always be the #1 helathy slowcooker recipe in my heart. You wonโ€™t believe how easy and full of flavor this meal is to make. The chuck roast is so tender after being in the slow cooker for hours, it basically falls apart in your mouth. Itโ€™s kind of life-altering and I just know youโ€™re going to love it too! This meal is great as a simple weeknight dinner or a true โ€œSunday Roastโ€.

Crockpot Teriyaki Meatballs

Sweetened with honey, slightly spicy from sriracha, and seasoned with garlic, ginger, and scallions, theyโ€™re sticky, savory, and perfect over rice or with roasted veggies (like myย Crispy, Buttery Broccolini). When it comes to healthy slowcooker recipes, this is one of the best.

Easy Instant Pot Shredded Chicken with Green Enchilada Sauce

Mexican-inspired food is always a yes for me, and thisย green enchilada chickenย hits that craving with tender chicken, a flavorful green enchilada sauce, and all the fresh lime and cilantro. Itโ€™s simple, cozy, and super versatile with tons of serving options

Creamy Crockpot Sesame Chicken

This Creamy Crockpot Sesame Chicken not only tastes better-than-takeout (if you ask Bridger and I), but actually is better for you than takeout. This is one of those healthy slowcooker recipes that you’ll make on repeat and your family will never be mad. Serve this over a bed of jasmine rice andย crispy broccolini – thereโ€™s just something so satisfying about a simple, healthy and flavorful meal all coming together. Hope you love it!

Slow Cooker Chicken Curry

Thisย slow cooker chicken curryย is an easy, high-protein dinner I come back to on repeatโ€”especially when I want something comforting but still balanced. Itโ€™s a true โ€œset it and forget itโ€ kind of meal, made with simple, real ingredients like chicken thighs, coconut milk, and plenty of vegetables.

Crockpot Chicken Bolognese

This Crockpot Chicken Bolognese is quickly becoming one of my favorite healthy slowcooker recipes to make. A bolognese with a twist, all you have to do is cook up your ground chicken + chicken sausage, boil your pasta al dente, and toss it all together in the crockpot for the most comforting, impressive and delicious dinner.
