One of the biggest favors I did for myself while pregnant was prep freezer-friendly meals to have for my first few weeks postpartum. I feel so lucky to have such a great partner in parenting, but my god the early weeks are just a whirlwind! Prioritizing high-quality food and nutritionally balanced meals is more important than ever during postpartum, but somehow it becomes the last thing on the list everyday. The more you can prep ahead to take care of yourself, the better chance you have at actually eating 3 full (hot) meals a day. Here are a few that I made and loved.

Chicken Pot Pie (Gluten-Free, Dairy-Free)

Bridge and I were so happy when we remembered I premade and froze my Chicken Pot Pie from my cookbook before Hayes arrived – so if you need a meal to start with, I highly recommend this insanely delicious homemade recipe.

Freezer Friendly Beef Enchiladas

High in protein and flavor, made with deliciously seasoned beef, creamy refried beans and the yummiest enchilada sauce, it’s a meal you can feel good about cooking any day. Click here for the recipe.

High-Protein Breakfast Sammies

Breakfast with a newborn is an extreme sport. Mornings seem to be especially chaotic, so having these in the freezer/fridge is a lifesaver! You’ll go crazy for the herby cream cheese spread in this recipe, it really puts this sammie over the edge. Click here for the recipe.

Nourishing Chicken Chili

There’s just something so nostalgic and nourishing about any kind of soup. Chili especially is one of my favorites to make when I want to feel nourished from within. Plus, I love that it’s freezer-friendly and perfect for meal prep. Click here for the recipe.

Beef & Zucchini Lasagna

This meal is just the most satisfying this to pull out of the freezer after a long day, oh my gosh. Who doesn’t love lasagna?! And this recipe especially really optimizes protein and veggies, so it’s a win win. Click here for the recipe.

High-Protein Meal Prep Egg Bites

These easy-to-make (Starbucks copycat!) egg bites are so savory and satiating. Best part is they’re perfect for reheating throughout the week for breakfast, lunch or a high-protein snack. Love that for all of us busy bees and mamas-to-be. Click here for the recipe.
