Peanut Butter Protein Bars

Ingredients 

  • 1.5 cups almond flour
  • 1/2 cup protein powder (vanilla or unflavored)
  • 3/4 cup creamy peanut butter (the natural, drippy kind)
  • 5 tbsp honey
  • 3 tbsp unsweetened almond milk
  • 1/3 cup chocolate chips
  • pinch sea salt

Instructions 

  • Mix all dry ingredients together in large bowl. Then stir in wet ingredients (including warmed honey). Lastly, stir in chocolate chips + sea salt.
  • Line an 8×8 dish or pan with parchment and pour dough inside. Flatten with silicone spatula, add some more choc chips and place in freezer to set for 30 min.
  • Remove and cut into bars. They’re ready to go! Store in airtight container in the fridge. Enjoy! 🙂

    These are great. I used Simple brand Pumpkin Seed Protein. The second time I made them I replaced 6 TBSP of the almond flour with 2 TBSP each of ground flaxseed, chia seeds, and hemp seeds. They are a nice variety on the original recipe and I imagine you could do many different add ins instead of that as well.

  2. I’ve never bought protein powder, is there a particular brand that works well with baking? I shop at Trader Joe’s or Sprouts, so something available there would be helpful! Thanks!

  3. In the original “perfect bar”, they have some veggie powders. Do you have any ideas how to add in some veggies to this?

    So easy to make and taste just like a perfect bar! I used unflavored vital proteins collagen powder and about 4 tablespoons honey. I added in a little vanilla extract too. They kind of taste better though like raw cookie dough. I cut into 16 squares. Thanks for the recipe!

    1. I just used a mix of oat flour, almond flour, and ground flax with no problem. I can’t see why using just oat flour would be a problem.

  5. If you wanted to reduce the sugar content (particularly if using sweetened protein powder), do you have any suggestions for something else “sticky” to help the bars hold together? Thanks!

    1. I tried this recipe again today with a few tablespoons of pumpkin instead of honey and I think it worked! The are chilling now but had a good texture when I formed them in the pan.
