Superfood Banana Bread (Using Simple Mills Box Mix)

Ingredients 

  • 1 mashed banana
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup unsweetened almond milk
  • 3 tbsp coconut oil
  • 1/4 cup ground flaxseeds
  • 2 tbsp chia seeds
  • 1 tsp cinnamon
  • 3 scoops collagen peptides, (optional)
  • 1 box Simple Mills banana muffin mix

Instructions 

  • Heat oven to 325°F.
  • Whisk eggs, milk, banana, vanilla extract, and coconut oil together in a large bowl. Add ground flaxseeds, chia seeds, cinnamon, and collagen, and box mix until well-blended. 
  • Pour batter into lightly greased (or parchment paper covered) 8-by-4-inch loaf tin.
  • Bake for 30 minutes.
  • Then, cover loosely with foil; bake an additional 25 to 30 minutes or until a toothpick comes out clean and edges of loaf start to pull away from the pan.
  • Cool 10 minutes before removing from pan.

    This has been my go-to recipe for a couple of years now, anytime I have a ripe banana on hand. We usually add some Hu chocolate gems and chopped walnuts to ours. It’s so good!

    Love this as a way to “dress up” the Simple Mills mix! It’s a favorite with everyone in my family from my parents to my 2 year old nephew and I feel good about serving something that’s both healthy and delicious.

    I love this recipe and I feel better about giving it to my kids as a snack. I have made as described many times, and not sure if it’s just me, but it takes quite a bit longer (like 30 min longer) than recommended to cook through. I now cook it at 350 rather than 325, but still takes longer. For that reason, I struggle to get the desired texture. For a fun change, I sometimes swap the banana muffin mix for Simple Mills pumpkin bread/muffin mix, add some chocolate chips, and bake as muffins.

    We love this recipe in our house. Instead of the collagen peptides, I add a scoop of Truvani protein powered. Baking it in a muffin tin makes for a perfect snack because I know we’re all getting our fat + fiber + protein in!
