Superfood Banana Bread (Using Simple Mills Box Mix)
Ingredients
- 1 mashed banana
- 2 eggs
- 1 tsp vanilla extract
- 1/2 cup unsweetened almond milk
- 3 tbsp coconut oil
- 1/4 cup ground flaxseeds
- 2 tbsp chia seeds
- 1 tsp cinnamon
- 3 scoops collagen peptides, (optional)
- 1 box Simple Mills banana muffin mix
Instructions
- Heat oven to 325°F.
- Whisk eggs, milk, banana, vanilla extract, and coconut oil together in a large bowl. Add ground flaxseeds, chia seeds, cinnamon, and collagen, and box mix until well-blended.
- Pour batter into lightly greased (or parchment paper covered) 8-by-4-inch loaf tin.
- Bake for 30 minutes.
- Then, cover loosely with foil; bake an additional 25 to 30 minutes or until a toothpick comes out clean and edges of loaf start to pull away from the pan.
- Cool 10 minutes before removing from pan.
Just made with the Simple Mills chocolate muffin and cake mix plus added walnuts on top. Delicious!!
So fantastic! This recipe is easy to make, nutritious, and delicious! I added a banana on top (as per the picture) and I ended up baking it in a shallower/wider baking dish because I didn’t have a loaf pan and it turned out well! I highly recommend this to anyone who is considering it.

I ran out of coconut oil, should we substitute equal parts butter?
Followed directions as written above. Took it out of oven after 30 + 20 min. My husband and young sons devoured it in about 2 days. So many nutrients and it’s delicious. Thanks Rachael.

You could do 2 cups of any flower – I had whole wheat so that’s what I used!
