Life has never felt so busy, which is why it’s important to have an arsenal of easy dinners for when you don’t feel like cooking.
I’m a 30-minutes-or-less kind of dinner gal personally. Usually by the time I look at the clock, it’s too late to make anything elaborate. Simple is best in my book!
My Favorite Dinners for When You Don’t Feel Like Cooking

Mexican Meatballs in Creamy Enchilada Sauce
This is one of my favorite dinners from my new cookbook — and mostly because of the homemade enchilada sauce. You need this sauce in your life. It’s rich, cozy, and somehow makes everything on your plate better. It’s the kind of dinner you finish and immediately think, “okay yeah, I’m making that again next week.”

Easy Turkey Tacos
I’m about to share my not-so-secret trick for making them 10/10 every single time. These easy turkey tacos (aka weekly turkey tacos in our house) are anything but dry or bland. Lean ground turkey, tons of flavor, and one simple ingredient that completely changes the game: green chiles.

Spicy Sriracha Ground Beef Bowls
These Spicy Sriracha Ground Beef Bowls are a flavorful and nourishing meal that’s about to become your new weeknight dinner go-to. Packed with protein from the savory, spicy beef, and paired with crispy roasted sesame broccoli, it’s an easy, gluten-free and dairy-free dinner that tastes incredible and comes together in under 40 minutes. It’s almost too good to be true!

One-Pan Lasagna Skillet
So, if you’re looking for a no-fuss, nourishing, one pan dinner, then you are in the right place. I’m confident this One Pan Lasagna Skillet will immediately be added to your weekly rotation as soon as you take your first bite.

Szechuan Chicken Lettuce Wraps
For those times you want a quick and easy dinner, but don’t want to resort to takeout, this is a recipe you need in your life. And by the way, it’s gluten and dairy-free (I got you my GF, DF girlies!), but you’d never know it because that spicy-savory-sweet Szechuan flavor will have you ready for seconds after that first bite.

Creamy Crockpot Sesame Chicken
Easy-to-make? Check. Healthy and flavorful? Check. A meal that’s crowd-pleasing + makes for delish leftovers? Check, check, check! What I love most about crockpot meals is how fuss-free they are. All you have to do is place your ingredients in the slow cooker, set the time and temp, and let it work its magic.

Seasoned Crispy Drumsticks
These are not only tasty but incredibly easy to make. All you need to do is pat the drumsticks dry, toss with olive oil and all the seasonings, and pop ‘em in the oven to bake for a bit. Effortless, to say the least! This is one of my all-time favorite dinners for when you don’t feel like cooking.

One-Pan Enchilada Skillet
We love a one-pan meal because that usually means it’s a quick dinner and an even quicker clean up. Not only are we saving time with cleanup, but making this dish as a skillet saves you all the time you’d spend rolling the tortillas and baking them without compromising any of the flavor.

Chicken Bacon Ranch Salad
This one is to throw together, high in protein and flavor, and just an overall winner. My stomach is growling just thinking about it.

Roasted Tomato Basil Soup & Grilled Cheese
I know I’m not the only one who grew up on the nostalgic version made with Campbell’s Tomato Soup with Kraft Singles melted between two pieces of Wonder Bread. Although that’ll forever hold a special place in my little foodie heart, I’m happy to say I’ve come up with a dietitian-approved, better-for-you take on it to add to all of our recipe collections.
