Pumpkin Chocolate Chip Muffins
Ingredients
- 1 pasture-raised egg
- 1/2 cup unsweetened almond milk
- 1/2 cup pumpkin
- 1/3 cup unsweetened Apple sauce
- 1 mashed banana
- 1/4 cup cashew butter
- 1/4 cup maple syrup
- 1 tsp vanilla
- 1 cup spelt flour
- 1 1/2 tsp baking powder
- 1/3 cup coconut flour
- 1/2 tbsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp pumpkin pie spice
- 1/8 tsp sea salt
- 1/4 dark chocolate bar
Instructions
- Whisk egg in large bowl then add almond milk, pumpkin, apple sauce, banana, cashew butter, maple syrup and vanilla to whisk again
- Mix dry ingredients in separate bowl and slowly pour into wet ingredients, stirring until thoroughly combined
- Pour batter into coconut oil sprayed muffin tin (fill cups 3/4 full), then drop several chocolate chunks on top (walnuts are a good addition as well)
- Bake for 23-26 min at 350 degrees F
- Remove from oven and let cool for 20 minutes
Could you replace the spelt flour with anything like coconut flour or almond flour?
