I might just be the biggest fan of a one-pan dinner.
Now that summer is around the corner and the days are longer (light out past 8 PM is my season) I find myself scrambling to get dinner ready at a reasonable time. Anyone else? I just like to enjoy as much sunshine as possible after a long, gray winter.
I need to get back to my crockpot and one-pan dinners because it takes such little brain power, and the cleanup situation is 10/10.
Sharing some of my favorites for all of us to lean on this season, enjoy!
One-Pan Dinner Winner: Enchilada Skillet
This is hands down the most popular recipe on my site and I’ll tell you why. It’s basically a deconstructed version of my favorite food, enchiladas, the flavor is incredible every time, it’s made in one skillet (!!), and I am 100% confident it will win over anyone. Less dishes? Yes, please. This one-pan dinner might just be my all time fav.
One-Pan Beef & Broccoli
Nutritious, delicious and takes under 30 minutes to make. Tossed in a made-from-scratch, kind of addictive sauce, it’s beyond satisfying. I love this one-pan dinner and am so happy with how it turned out. Beef and Broccoli is always a winner but this one is just so fresh, flavorful and balanced. Better for you than a typical takeout dish, it’s a healthy protein-and-veggie meal I’m confident you and your family will love too.
Easy Sheet Pan Chicken Fajitas & Jalapeño Crema
Simple to prep, loaded with flavor, and perfect for tossing everything on one pan and letting the oven do the work. This is a balanced, protein-packed meal that’s also gluten-free (as long as you serve with GF corn tortillas or lettuce cups), making it a great option for a variety of lifestyles.
One-Pan Lasagna Skillet Dinner
No one likes cleaning up stacks of dishes after a long, busy day, and I can so relate. So, if you’re looking for a no-fuss, nourishing, one-pan dinner, then you are in the right place. I’m confident this One Pan Lasagna Skillet will immediately be added to your weekly rotation as soon as you take your first bite.
15-Minute Chicken Sausage and Peppers Skillet with Bone Broth Rice
My tried and true one-pan dinner since college, and I don’t think I’ll ever get sick of it. It just takes a few ingredients – organic chicken sausage, nutrient-dense bell peppers, and flavorful bone broth rice – and your whole family is going to love it. I mean, you can’t beat a 15-minute meal, am I right?
