These crispy sheet pan quesadillas are the easiest way to turn leftover High-Protein Street Corn Taco Skillet into a totally new meal. The taco filling gets layered onto tortillas with plenty of shredded cheddar, then baked until the tortillas are golden and crispy and the cheese is melted. It’s the perfect next-day dinner or lunch when you already did the work the night before.

Somehow, I think this might be my first quesadilla recipe on the blog, and I don’t know why it took me so long. Either way, I’m glad we have one now because these are definitely worth the wait. And the fact that they’re made from leftovers is such a win.

Crispy Sheet Pan Quesadillas Made From Leftovers

The easiest way to make these is to plan ahead: make a double batch of my High-Protein Street Corn Taco Skillet for dinner, set half aside, and turn the leftovers into quesadillas the next day.

The filling is stacked with protein and fiber, so you’re getting a lot of substance in every crispy, cheesy slice without needing to cook another filling from scratch. Which for me, as a working mom (of 2 kids soon enough – can’t believe I’m saying that!), is so ideal.

Just don’t overfill them! About a cup of the leftover taco filling per quesadilla is plenty. It can be tempting to pile it on, but too much filling makes the quesadillas harder to flip and keeps the tortillas from getting quite as crisp.

A Crispy Quesadilla Upgrade

There is just something about a really good quesadilla when the tortilla is actually crispy and the cheese is perfectly melted inside. Baking these on a sheet pan makes it easy to get that golden, crunchy exterior without standing over a skillet making them one at a time.

And then there’s the street corn taco skillet filling that you will quickly become obsessed with. Between the beans, corn, veggies, and all the creamy, savory flavors – it becomes something that feels completely different from the dinner you had the night before when it all gets tucked inside a tortilla with cheddar. Add some guacamole, salsa, and Greek yogurt (or leftover street corn sauce, if you have!) for dipping and call it a meal.

These easy sheet pan quesadillas turn my leftover High-Protein Street Corn Taco Skillet into a crispy, cheesy next-day meal that’s perfect for a quick lunch or dinner.

  1. Get your sheet pan ready. Start by heating the oven and lining a large sheet pan with parchment. This makes cleanup super easy and helps the quesadillas crisp up nicely.
  2. Build your quesadillas. Arrange the tortillas on the pan, then layer on shredded cheddar, leftover street corn taco filling, and a little more cheese. The first layer of cheese helps create that melty, cheesy middle while also helping the filling stick to the tortilla.
  3. Top + oil. Add another tortilla to each quesadilla and gently press them together. Give the tops a light brush of avocado oil—this is the little step that helps the tortillas get golden and crispy in the oven.
  4. Bake until golden + crispy. Bake, carefully flip, then finish baking until the tortillas are crisp and the cheese is melted. Let them cool for a couple of minutes before slicing into wedges so everything has a chance to settle.
  5. Serve & enjoy. Cut into wedges and serve with salsa, guacamole, and Greek yogurt for dipping. The cool, creamy dips are such a good match with the crispy, cheesy quesadillas.

Tips for the Best Sheet Pan Quesadillas

Making these sheet pan quesadillas with leftover filling is pretty straightforward, but these are the little tips I’d keep in mind for the best texture and easiest prep.

  • Make the skillet first: This recipe is designed specifically to use the leftovers from a double batch of my High-Protein Street Corn Taco Skillet. Make the skillet for dinner, set half aside, and use it to make these quesadillas the next day.
  • Don’t overfill: The filling is already packed with beans, corn, and vegetables, so about 1 cup per quesadilla is plenty. Overfilling can make them harder to flip and less crispy.
  • Tortilla options: Use cassava tortillas or your favorite gluten-free tortillas, if needed, or regular flour or sourdough tortillas work too. If your tortillas are small, you may need more than 8 to use up all of the filling.
  • Cheese: Cheddar adds a classic melty, cheesy layer, but a Mexican blend or Monterey Jack would also work well. Feel free to use what you’ve got and what you like best!
  • Make them extra crispy: Don’t skip brushing the tortillas lightly with avocado oil before baking. It helps them get golden and crisp in the oven.
  • Greek yogurt: For a dairy-free option, use your favorite plain, unsweetened dairy-free yogurt for dipping (such as Cocojune).

These easy sheet pan quesadillas turn my leftover High-Protein Street Corn Taco Skillet into crispy, cheesy quesadillas with golden tortillas and melty cheddar. A simple way to repurpose leftovers into an easy lunch or dinner.

Ingredients 

Instructions 

  • Preheat the oven to 425°F. Line a large sheet pan with parchment paper.
  • Arrange 4 tortillas on the sheet pan. Brush the top side with oil, then flip so it’s parchment side down. Sprinkle about ¼ cup cheese on the tortilla first, then spread about 1 cup of the leftover taco filling over each tortilla, leaving a little space around the edges. Sprinkle each with about another ¼ cup shredded cheddar on top of the street corn mixture.
  • Top each with another tortilla and gently press down so the quesadillas hold together.
  • Lightly brush the tops of the tortillas with avocado oil.
  • Bake for 8 to 10 minutes, then carefully flip each quesadilla. Return to the oven and bake for another 4 to 6 minutes, until the tortillas are golden and crispy and the cheese is melted.
  • Let cool for a couple of minutes, then cut into wedges.
  • Serve with salsa, guacamole, and Greek yogurt for dipping. Enjoy!

To Store & Reheat:

  • Store leftover quesadillas in an airtight container in the refrigerator for up to 3 days.
  • Reheat in the oven or air fryer for the best texture.

Swaps & Substitutions:
  • Tortillas: Use cassava, gluten-free, flour, or sourdough tortillas. Smaller tortillas may require more than 8.
  • Cheese: Swap cheddar for Mexican blend or Monterey Jack.
  • Greek yogurt: Use plain, unsweetened dairy-free yogurt for a dairy-free option (such as Cocojune).
  • Avocado oil: Another neutral oil, like olive oil, can be used for brushing the tortillas.
