Creamy Sesame Chicken Skewers

Ingredients 

Chicken Skewers

  • 1-2 lbs organic chicken breast, trimmed and cubed
  • 1 jar Side Dish Sesame Dressing
  • avocado oil
  • sea salt
  • green onion, chopped
  • wooden skewers, for cooking

Sides

  • 1 bundle broccolini
  • avocado oil
  • sea salt
  • rice,, cooked according to package

Instructions 

  • Prep the wooden skewers by soaking them in water for 30 minutes, this prevents them from burning on the grill.
  • Add the sesame dressing (reserve ~2 tbsp to garnish), juice of 1/2 lime, splash of avocado oil, and sea salt to a bowl. Mix to combine, then add the cubed chicken breast. Toss and marinate for 15 minutes.
  • In a separate bowl, toss the broccolini in avocado oil and sea salt. Set aside.
  • Preheat the grill to about 600 degrees F.
  • While the grill heats, add the chicken to the skewers.
  • Add the chicken skewers to the hot grill and cook covered for 4-5 minutes, flip, and another 4-5 minutes covered.
  • Add the broccolini when the chicken is half way done and cook until slightly charred.
  • Serve with chopped green onion, lime wedges, and the reserved sesame dressing. Enjoy!
