Gluten-Free, Dairy-Free Banana Bread

Honestly guys… this one is IT! You have to try it!

Ingredients 

  • 3 bananas
  • 2 eggs
  • 1/3 cup coconut oil
  • 1/4 cup maple syrup
  • 1 tsp vanilla
  • 1 1/4 cup almond flour
  • 1/2 cup tapioca flour
  • 1/4 cup coconut flour
  • 1 tbsp cinnamon
  • 1 tsp baking soda
  • Pinch sea salt
  • 1/4 tsp nutmeg
  • 3/4 cup walnuts
  • 1/2 cup dairy-free chocolate chips

Instructions 

  • Whisk or use a hand mixer to combine the wet ingredients.
  • Fold in dry ingredients, followed by roughly chopped walnuts and chocolate chips.
  • Add parchment paper to a loaf tin, then pour in the batter. Add some more walnuts & choc chips.
  •  Bake at 350 degrees F for 50 minutes!

    My favorite paleo sweet bread recipe. On the last step I like to divide my batter and do half with chocolate and half with dried cranberries and bake them as muffins. I also use this recipe for pancakes by add baking powder and water to thin it out.

    Just baked this and it turned out amazing, perfect texture and not overly sweet, really nice flavor with the cinnamon too, can’t believe it’s gluten free and dairy free!
