This massive kale salad is life changing! I’m not always a fan of kale, but when its cut down and massaged with the right dressing, I can get down! Kale is high in fiber and filled with so many nutrients so I’m always trying to look for tasty ways to incorporate it into my diet. Enjoy! 🙂
Kale Tahini Salad
Lemon Tahini Vinaigrette
- 1/4 cup olive oil
- 3 tbsp tahini
- 1 lemon, squeezed
- 3-5 tbsp filtered water
- 1 tsp minced garlic
- salt, to taste
- pepper, to taste
- kale, finely chopped
- fresh parsley
- red bell pepper, diced
- Trader Joe's Sweet Potato Ribbons sautéed
- cucumber, diced
- hemp seeds
- sunflower seeds
- nutritional yeast
First, make the dressing. Add all the ingredients for the dressing together and blend until smooth.
Chop up desired amount of kale.
Pour the dressing over the kale and massage it into the kale until it softens up.
Sauté desired amount of sweet potato ribbons in a pan with a little avocado oil. Add sweet potato ribbons to the salad.
Dice the cucumber, bell pepper, and carrots. Add to the salad.
Slice avocado and add to the salad.
Add desired amount of hemp seeds, sunflower seeds, and nutritional yeast. Add parsley and serve.
