
If you want a summer salad you can make with literally any main dish, you have to try my Mediterranean chickpea salad. I’ve made this one on repeat because it takes just a few minutes to throw together, uses simple ingredients I usually have on hand, and is SO crunchy and vibrant.
It’s one of those sides that instantly makes grilled chicken, burgers, steak, salmon, or whatever’s on the menu feel a little more summery. Basically, it’s my permanent favorite flavor, so I have a feeling I’ll be making this again even after the season’s over.

What Makes This Mediterranean Chickpea Salad So Good
The crunch is really the whole point here. Persian cucumbers, bell peppers, and red onion give you plenty of fresh texture, while chickpeas and feta make it feel a little more substantial. Capers add that salty, briny bite, and the lemon, red wine vinegar, olive oil, and oregano keep everything bright and fresh. It’s too good!
And from a nutrition standpoint, I love that the vegetables aren’t just there for color. You’re getting a mix of vitamins, minerals, and antioxidants, while the chickpeas provide fiber and help make this more satisfying than your average bowl of chopped veggies.



Let the Salad Sit for a Bit
You can definitely serve this chickpea salad right away, but if you have 30 minutes, let it hang out in the fridge first. The vegetables get a chance to soak up the dressing, and the oregano and capers have a little more time to work their way through the salad.
It somehow gets even better after sitting for a bit. It also makes a great make-ahead summer side, so you can prep it earlier in the day and pull it straight from the fridge when it’s time to eat.
Ingredients You’ll Need:
- Persian cucumbers
- Red bell pepper
- Green bell pepper
- Red onion
- Capers
- Crumbled feta cheese
- Canned chickpeas
- Fresh lemon juice
- Extra-virgin olive oil (Brightland is a good option)
- Red wine vinegar
- Dried oregano
- Flaky sea salt

A Few Simple Swaps
This Mediterranean chopped salad is very forgiving, so use what you have! If you’re missing one of the vegetables, swap in another crunchy option like tomatoes, carrots, or additional cucumber or bell pepper. You can also adjust the amount of feta or capers depending on how salty and briny you like your salad.
The one thing I wouldn’t skip is the lemon & red wine vinegar combination. That acidity is what keeps all the fresh vegetables tasting bright instead of flat.

This Mediterranean chickpea salad is crunchy, vibrant, and so easy to throw together for a summer meal or to pair with just about any main dish. The most refreshing side!





- Chop everything up. Add the diced cucumbers, bell peppers, red onion, capers, feta, and chickpeas to a large bowl. Feel free to swap in any veggies you have on hand—this salad is very forgiving.
- Dress it up. Drizzle with fresh lemon juice, extra-virgin olive oil, and red wine vinegar, then add the oregano and flaky sea salt. The combination keeps the salad bright and fresh while bringing all those crunchy veggies together.
- Toss and let it meld. Give everything a good toss until well combined, then serve right away or refrigerate for about 30 minutes. That little bit of time in the fridge lets the flavors meld and makes an already-good salad even better.
- Serve + enjoy. Serve as a side with your favorite summer dinner, or keep it in the fridge for an easy add-on to meals throughout the week. Option to enjoy as a quick refreshing snack too!
What to Serve with Mediterranean Chickpea Salad
This is one of those sides I’d put next to almost anything. It’s especially good with grilled proteins and Mediterranean-inspired dinners, but honestly, burgers and fries are also very much a good idea.

Mediterranean Chickpea Chopped Salad

Ingredients
- 3 Persian cucumbers, diced
- 1 red bell pepper, roughly chopped
- 1 green bell pepper, roughly chopped
- ¼ red onion, diced
- 1 tablespoon capers
- ¼ cup crumbled feta cheese
- 1 (15-ounce) can chickpeas, drained and rinsed
- Juice of 1 lemon
- 2-3 tablespoons extra-virgin olive oil, (Brightland is a good option)
- 1 tablespoon red wine vinegar
- 1 teaspoon dried oregano
- 1 teaspoon flaky sea salt
Instructions
- To a large bowl, add the cucumbers, bell peppers, red onion, capers, feta, and chickpeas.
- Drizzle with the lemon juice, olive oil, and red wine vinegar, then sprinkle with oregano and salt. Toss until well combined and serve immediately, or refrigerate for 30 minutes to allow the flavors to meld.
- Store in an airtight container for up to 3 days.
