Cashew Chia Pudding

Servings: 3 cups

Ingredients 

  • 1 cup raw cashews
  • 2 cups filtered water
  • 2-3 tbsp maple syrup
  • 2 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/3 cup chia seeds

Instructions 

  • Soak cashews in warm water for 4 hours, then drain.
  • Add to high-powered blender with filtered water, maple syrup and vanilla to blend on high until smooth. Once done, add chia seeds and pulse once more to combine.
  • Pour into jars or small tupperware and store in refrigerator.
  • When ready to eat, add toppings such as heated berries, diced apple, banana, coconut flakes, oats (breakfast idea), chocolate chips, nuts, etc.
