Taking FULL advantage of pomegranate season and incorporating them into all my favorite recipes. And let me tell you… this one is a winner. I’ve made this coconut chia pudding a handful of times, but to be honest, I love this splash of ruby red color and sweet, tart flavor the best with this recipe! It’s a great anytime snack or breakfast! But also don’t forget you can shave some dark chocolate over the top and you’ll have yourself a super delish, healthy dessert! You’re welcome 😉

One of the reasons why this is one of my favorite recipes is because it’s so simple to make. Stir a few ingredients in a jar and then toss in the fridge to let sit/thicken for a few hours and it’s good to go! Full of healthy fats from the chia and hemp seeds and with the POM POMS Fresh Arils you’re getting a good source of fiber and adding antioxidants tyour snack/breakfast.
 

I love using these convenient 8oz packages of POM POMS. They’re derived from whole fresh pomegranates and are so refreshing.

P.S. they’re available nationwide October-January in the fresh cut fruit section and/or the berry cooler in the produce section in most grocery stores.

Creamy Coconut + Pomegranate Chia Pudding

Servings: 2 servings

Ingredients 

Chia Pudding

  • 2 cups unsweetened coconut milk, (or any nut milk)
  • 1/4 cup chia seeds
  • 2 tbsp hemp seeds
  • 2 tsp vanilla extract
  • 1/2 tsp cinnamon

Toppings

  • 1 cup POM POMS Fresh Arils
  • 3 tbsp cacao nibs
  • 1/4 cup shredded coconut

Instructions 

  • In a large jar, pour in nut milk then add chia seeds, vanilla and cinnamon. Stir thoroughly until well combined.
  • Cover and store in fridge for 2+ hours or overnight to soak. *Will last for up to 3-4 days, fresh in the refrigerator.
  • Once chia pudding has thickened, separate toppings into two different jars for two servings, starting with POM POMS Fresh Arils on the bottom, then chia pudding, then cacao nibs and coconut on top. Enjoy!
