
Healthy Apple Crumble
This dessert turned out amazing! You can turn it full vegan by swapping for a fully vegan granola--

Cook Time 50 minutes
Total Time 1 hour 5 minutes

Ingredients
Filling
- 9 apples
- 1/4 cup coconut sugar
- 2 tbsp cornstarch
- 1/2 tbsp cinnamon
- 1 tsp ground ginger
- 1 lemon, squeezed
Crumble
- 1/2 cup + 2 tbsp almond flour
- 3 tbsp GF rolled oats
- 1/2 cup roughly chopped pecans
- 1/2 cup granola
- 1 tbsp cinnamon
- 1/3 cup coconut oil, melted
- 1/4 cup coconut sugar
Instructions

Preheat oven to 350 degree F

Slice all apples and remove the cores

Add apples to large mixing bowl and toss with coconut sugar, cornstarch (thickener), cinnamon, ginger and lemon juice

Pour into 9 x 12-in baking dish

Add ingredients listed for crumble into same mixing bowl and mix until thoroughly combined

Layer evenly over top of filling

Bake in oven for 50 minutes, or until starting to bubble
