Creamy Chicken Alfredo (DF, GF!)

Ingredients 

  • 2 large organic chicken breasts, trimmed, tenderized and sliced in half once more
  • 3 tbsp avocado or olive oil
  • 1/2 cup red onion, diced
  • 1 tbsp minced garlic
  • 1 bunch broccolini, 1/2-inch ends trimmed off, (slice a few times length-wise)
  • 1/4 cup chicken or bone broth
  • 1 box brown rice penne pasta, (I prefer Jovial brand)
  • 1 jar Primal Kitchen dairy-free alfredo sauce
  • pink salt, to taste
  • ground pepper, to taste

Instructions 

  • Cook the pasta in a large pot according to package. Drain, then drizzle extra virgin olive oil over the top, about 1 tbsp, (do not over stir) and set aside.
  • Heat oil in a large skillet until hot but not smoking. Add onion + garlic to sauté for 3-4 minutes on medium heat.
  • Add tenderized chicken to brown on either side, about 4-5 min. Season with salt and pepper, then add in broccolini. pour in broth and cover with lid to steam for several minutes.
  • Remove the lid, pour the noodles over into the skillet and along with the jar of alfredo sauce. Give it all a good stir, cover with lid and turn down the heat to let cook for 4-5 minutes. Ready to serve! 🙂

    I tried this recipe after having to go dairy free and I was so worried that my family would not like me having to change the menu to include dairy free (and I really didn’t want to make 2 different dinners every night). My family loved it! In fact, my daughter now requests this dish frequently! I followed the recipe to a T the first time, but didn’t like the texture of the chicken after steaming it for awhile for the brocoli. Now I just steam the broccolinni separately and add it when I add the sauce. I add the stock per the recipe and just let it boil for a minute. So easy and delicious!

    So easy and delicious!!! I did everything the recipe said but I used peas instead and added sun dried tomatoes (just made sure to drain the oil from the jar) .. It was one of the best meals, my boyfriend kept wanting more!!

    I finally made this after months of wanting to try it and now I’m wondering what took me so long! It’s amazing!! Like seriously could not get enough of it! And I couldn’t believe how fast and easy it was to make, I will definitely be making this again!

    I want to start off by saying I am no chef. I’m new to the kitchen and I decided to try this out tonight with whatever I had in my pantry and it was so easy. I’ve had the Alfredo Sauce for a few weeks now and felt like it was time to make it. A few changes I had to make: used broccoli florets, banza pasta, organic chicken thighs, and pasta water instead of the both. The flavor of this was not what I was expecting. It reminded me of beef stroganoff a little bit. It was absolutely delicious!! I’m excited for my leftovers tomorrow! Next time I’m going to add some mushrooms.

    I made this recipe when my husband and I were not eating dairy and gluten. We were craving chicken Alfredo pasta and although the sauce is not exactly like dairy Alfredo sauce, it is really satisfying. The dish is flavorful and we enjoyed it! I’ll definitely make this again, as this is a much healthier version of chicken Alfredo.

    Um YES! I was worried about making this for my fiance as he doesn’t eat dairy free at ALL. Not kidding, he said after finishing his last bowl, “This needs to be in the dinner rotations. It’s so good.” I also did regular broccoli florets and turned out great! Thanks so much for a tasty meal I can meal prep so I’m not cooking every night!!!

    This was really good and easy. I used the same pasta and sauce, but used already grilled cut chicken breast from WF and regular broccoli florets and it came out great. Topped with some sun dried tomatoes for a little extra yum. I’m in law school and I need one pot large meals to have throughout the week and this definitely fits the bill. Thanks for another good one Rachael! (also have the twix bars chillin in the freezer yayyyyyyy!)
