I’m a biiig fan of chia pudding. If you’re here I probably don’t need to explain why, but that’s not going to stop me! Who doesn’t love a quick and easy food that you can prep in advance, eat for a meal or a snack or dessert (trust me) and is so nutritionally dense and good for both your gut and your brain health? Are you on board or what.

Chia pudding is a staple in my refrigerator. You’ve probably seen me make my viral Coconut Mango Chia Pudding, and if you love this recipe you’ll want to try that one next. There are an endless amount of flavor combinations to dress up a standard chia pudding, and I absolutely love using coconut cream in the base – it adds so much flavor and healthy fats to keep us full for longer.

INGREDIENTS YOU’LL NEED

  • Unsweetened Almond Milk
  • Organic Coconut Cream
  • Chia Seeds
  • Hemp Seeds
  • Vanilla Extract
  • Cinnamon

OPTIONAL TOPPINGS

  • Blueberries
  • Raspberries
  • Pecans
  • Goji Berries
  • Coconut Flakes

HOW TO MAKE CREAMY COCONUT CHIA PUDDING

Start by prepping the chia pudding base. Add the almond milk, coconut cream, chia seeds, hemp seeds, vanilla extract and cinnamon to an air-tight container. Stir well, and place in the refrigerator for at least 1 hour, preferably 2+ hours or overnight.

Once your chia pudding has set, stir well and serve with your desired toppings. I love a mix of berries, goji berries, pecans, and coconut flakes. Enjoy!

HOW LONG DOES CHIA PUDDING LAST?

If stored in an air-tight container in the refrigerator, you can enjoy for up to a week. The chia pudding won’t last as well if you add fruits or nuts, so wait until you serve it to add any additional ingredients!

IS IT GOOD TO EAT CHIA SEEDS EVERY DAY?

Because of the healthy fats and fiber in chia seeds, and the many uses in both baking and cooking, chia seeds are great to keep on hand. I personally love throwing chia seeds into my smoothies, or enjoying a chia parfait for a snack that actually keeps me full. Eating chia seeds consistently will only help with digestion and that gorgeous omega-3 glow!

WHAT ARE THE BENEFITS OF CHIA SEEDS?

Chia seeds pack a nutritional punch. They’re great for digestion, brain-health, and glowing skin because of the omega-3 fatty acids, antioxidants, and dietary fiber. Paired with fruits and a sprinkle of nuts, chia seeds make for a satiating snack or meal.

Ingredients 

  • 3/4 cup unsweetened almond milk
  • 1/4 cup organic coconut cream
  • 1/4 cup chia seeds
  • 2 tbsp hemp seeds
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon

Toppings

  • fresh organic blueberries
  • raspberries
  • pecans
  • goji berries
  • coconut flakes

Instructions 

  • Thoroughly mix all ingredients together in a mason jar or glass. 
  • Cover the mason jar/glass and let it sit in the fridge for at least an hour. 
  • Take it out of the fridge, and top with fresh organic berries, pecans, goji berries, coconut flakes, and cinnamon. Enjoy!
