I got a specific request to post a blog about meals that are freezer-friendly from a mom-to-be looking to prep some meals for after giving birth. I love the idea of cooking healthy meals ahead of time to make sure you have easy things on hand when life is crazy.. and now that my sister is a mom, I really know how crazy it can be!

Breakfast & Snacks

GF Paleo Banana Pancakes – these are great to make in advance and stick in the freezer for a convenient breakfast. Make a double batch and store them in a large air-tight container with parchment paper between each layer to make sure they don’t stick together. When you’re ready to pull these out, you can pop them in the toaster or microwave until their hot! Pair with peanut-butter and/or yogurt for healthy fats and protein 🙂

Egg Bite Muffins – you can store these in the freezer, but I recommend pulling a few out the night before you want to eat them and let them thaw in the fridge. Warm up in the microwave or a low-temp pre-heated oven until hot.

Smoothies – save yourself a few minutes in the morning by prepping your smoothie ingredients and storing in baggies in the freezer. When it comes time for breakfast, you can add the portioned baggie, a bit of ice, and almond milk or water and blend! My current favs include: Snickerdoodle Chip Smoothie, PB&J Smoothie, and my Glow-To Smoothie.

Energy Bites & Bars– Prep a few different flavors and store them in an air-tight container in your freezer. With these, I’d recommend pulling the amount you want to eat the next day the night before so they have time to thaw and regain their texture. I love the AB&J Bars, Peanut Butter Protein Bars and PB Chocolate Chip Protein Balls.

Mains 

Spicy Penne Alla Vodka with Meatballs – make a double batch of the meatballs and thaw as needed. Serve with pasta and vodka sauce as listed, or make it super easy on yourself and serve with Raos Marinara and pasta or with rice!

Healthy Teriyaki Meatballs – make a double batch (you’ll get lots of meatballs) and let this meal feed you for several lunches and dinners!

Crispy Chicken Parm – make pasta or rice right before serving, or have it for lunch with a salad!

Beef Bolognese – freeze in an airtight container. Pull it out the night before to let it thaw in the fridge or slowly reheat in a large pot. Make the noodles right before serving!

Shredded Chicken Enchiladas – follow the recipe as written, then freeze the entire pan (make sure it is sealed well so no air can get it). Thaw in the fridge and rebake, or bake straight from the freezer until hot throughout.

Go-To Turkey Burgers – these freeze and thaw like a dream! Freeze with layers of parchment paper between so they don’t stick, and pull them out as you need them. Great for lunch or dinner or a hearty snack 🙂

Soup – soup freezes so well and makes for a quick and convenient lunch or dinner. I highly recommend freezing in small portions to make reheating a little bit easier. I love these souper cubes on amazon which allows you to freeze in individual portions. Some of my fav soups are Shredded Chicken Verde Bone Broth Soup, Hearty Paleo Chili, White Bean Chicken Chili, Roasted Tomato Basil Soup, and Chicken Noodle Soup.
